Roast Beef

Serve in oven safe dish with roasted vegetables.

Make this sirloin roast beef with vegetables in roasted garlic and mustard oil. This oven roast beef will be browned on the outside and juicy on the inside.

½ cup mustard to marinate
1 cup garlic roasted, to marinate
¼ cup olive oil to marinate
2 Tablespoons paprika to marinate
1 Tablespoon salt to marinate
1 Tablespoon pepper to marinate
1 piece beef chuck
2 cups cherry tomatoes
2 cups cambray potatoes halved
2 cups squash cut into wedges
1 piece red onion cut into rings

Easy Directions

1 Preheat oven to 400ºF.

2 Using a fork, stir together mustard, garlic, olive oil, paprika, salt, and pepper in a small bowl. Mash into a paste. Set aside.

3 On a cutting board, truss the beef chuck with kitchen twine. Using a kitchen brush, spread the marinade preparation evenly. Reserve. 

4 Heat a pan and sear meat until browned. Remove from heat and set aside.

5 Place meat in an oven-safe dish with the vegetables and roast for 40 minutes. Remove from oven, cut, and enjoy.
