1 Preheat oven to 400ºF.
2 Using a fork, stir together mustard, garlic, olive oil, paprika, salt, and pepper in a small bowl. Mash into a paste. Set aside.
3 On a cutting board, truss the beef chuck with kitchen twine. Using a kitchen brush, spread the marinade preparation evenly. Reserve.
4 Heat a pan and sear meat until browned. Remove from heat and set aside.
5 Place meat in an oven-safe dish with the vegetables and roast for 40 minutes. Remove from oven, cut, and enjoy.
