1 Preheat oven to 392° Fahrenheit.
2. For the filling, heat chorizo in a small saucepan until fat renders. Next, add onion, garlic, pork meat, sweet corn, and cook for 10 minutes. Add tequila, almonds, and carrots, and season with salt. Set aside.
3. For the glaze, blend together chipotle chile, guajillo chile, ancho chile, garlic, butter, tequila, onion, white vinegar, salt, and pepper until smooth. Set aside.
4. Place turkey on a rimmed baking sheet and fill with the chorizo mixture. Tie the legs with kitchen twine and glaze with the blended mixture. Bake for 2 to 3 hours. Remove turkey from the oven. Serve with escovitch vegetables, garlic, and rosemary. Enjoy.
