Spicy Tequila Turkey

Serve with escovitch vegetables and filling.

Delicious spicy turkey with a special chorizo and pork meat filling, glazed in chipotle chile for a great adobo sauce.

2 cups chorizo for the filling
1 cup onion finely chopped, for the filling
3 Tablespoons garlic finely chopped, for the filling
1 lb ground pork meat for the filling
1 cup sweet corn for the filling
¼ cup tequila for the filling
1 cup almonds sliced, for the filling
2 cups carrot sliced into strips
1 Tablespoon salt
1 cup chipotle chile in adobo sauce
5 pieces guajillo chile roasted, cleaned and seeded, rehydrated
2 pieces ancho chile roasted, cleaned and seeded, rehydrated
6 cloves garlic roasted
2 cups butter melted
1 cup tequila
1 piece onion roasted
1/8 cup white vinegar
1 Tablespoon salt
1 Tablespoon pepper
1 piece turkey about 13-17 lb

roasted garlic to serve
Rosemary to serve

Easy Directions

1 Preheat oven to 392°  Fahrenheit.

2. For the filling, heat chorizo in a small saucepan until fat renders. Next, add onion, garlic, pork meat, sweet corn, and cook for 10 minutes. Add tequila, almonds, and carrots, and season with salt. Set aside.

3. For the glaze, blend together chipotle chile, guajillo chile, ancho chile, garlic, butter, tequila, onion, white vinegar, salt, and pepper until smooth. Set aside.

4. Place turkey on a rimmed baking sheet and fill with the chorizo mixture. Tie the legs with kitchen twine and glaze with the blended mixture. Bake for 2 to 3 hours. Remove turkey from the oven. Serve with escovitch vegetables, garlic, and rosemary. Enjoy.
