1 Heat water in a small sauce pan and cook Regular Beef Menudo and beef leg with onion, garlic and bay leaf for 40 minutes. Remove from heat and reserve.
2. To make the adobo sauce, heat a comal on medium and roast chiles with onion, garlic and allspice. Remove and reserve.
3. Rehydrate chiles in a bowl of water to soften. Reserve.
4 Blend the rehydrated chiles with onion, garlic, allspice and salt.
5 Add the adobo sauce to the menudo and cook for 30 minutes. Serve hot and enjoy with chopped onion and cilantro, oregano and radish rounds.
