Menudo is a delicious preparation made of beef belly in warm chile guajillo broth, served with chopped onion, celery and a dash of oregano. This dish is perfect to enjoy anytime.

Serves 10


8 cups wáter to cook menudo
2 lb Regular Beef Menudo (Tripe) clean
2 lb Beef leg clean
1 piece onion quartered
5 cloves garlic peeled
1 leaf bay leaf
8 pieces guajillo chile cleaned, deveined and seeded
1 piece onion halved
4 cloves garlic
1 teaspoon allspice
4 cups water
1 teaspoon salt
1 cup onion finely chopped, to serve
Lime to serve as needed
¼ cup cilantro chopped, to garnish
Dry Oregano to garnish as needed
Radish cut into rounds as needed

Easy Directions

1 Heat water in a small sauce pan and cook Regular Beef Menudo and beef leg with onion, garlic and bay leaf for 40 minutes. Remove from heat and reserve.

2. To make the adobo sauce, heat a comal on medium and roast chiles with onion, garlic and allspice. Remove and reserve.

3. Rehydrate chiles in a bowl of water to soften. Reserve.

4 Blend the rehydrated chiles with onion, garlic, allspice and salt.

5 Add the adobo sauce to the menudo and cook for 30 minutes. Serve hot and enjoy with chopped onion and cilantro, oregano and radish rounds.
